No-bake Elvis Bars

Oh, if Elvis lived today.  Would he be vegan? Do juice cleanses? Eat gluten-free?  One thing he would surely enjoy is the healthy remake by Angela Liddon on the ridiculously decadent Elvis Pie, the tribute to Elvis' favorite combo and sandwich - peanut butter and banana on toast. Angela's recipe for No-Bake Elvis Bars, is on her oh so creative blog Oh She Glows.    The richness comes purely from two ripe bananas.  'No-bake Elvis Bars' are vegan, raw and quite simple to make.   I modified the Oh She Glows recipe per the SimplyCooking® Pantry and methods. This delightful little recipe you will surely come to know and love; a no-bake pan of treats made from a few ingredients in the SimplyCooking® Pantry.  

no-bake elvis bars {adapted from Oh She Glows}

Crust

170 grams {1 1/2 cups} blanched almond flour

2 Tbsp unrefined organic coconut oil, melted

2 Tbsp honey

1 Tbsp  peanut butter or other nut butter

pinch salt {Celtic Sea Salt preferable}

Fit a 8 x 8 inch pan with two strips of parchment paper placed crosswise and overhanging by a couple inches.  

In a medium bowl mix crust ingredients with your fingertips and press into the pan.  Wet your fingertips with water, if necessary to stick.  Place the pan in the freezer while preparing the filling.

Filling

2 ripe bananas

4 Tbsp unrefined organic coconut oil, slightly soft

2 Tbsp peanut butter or other nut butter

1 tsp vanilla

pinch salt {Celtic Sea Salt preferable}

Blend all ingredients until smooth.  {An immersion blender is perfect for this job. Wipe out and use the bowl from the crust.}  Pour into the pan and return to the freezer for 1 hour. 

Drizzle

3 Tbsp chocolate chips or 2 oz. dark chocolate

1/2 Tbsp unrefined organic coconut oil

1 Tbsp honey

Melt the chocolate and coconut oil over warm heat.  Set aside.  Remove the pan from the freezer and using the parchment overhang, lift out the bars and cut into 16 squares.  With a fork, drizzle the chocolate and then honey over the bars.  Return the squares to the freezer until the drizzle is set.  Enjoy.  Store the bars in the freezer.
