Summer Squash Tartines

You can make a meal out of summer squash in this simple, clever way.  This tartine recipe is adapted from one by Deborah Madison in the gorgeous Garden Design magazine (Spring, 2015 issue). Tartines are open-faced sandwiches on toast with a savory spread. They are frequently on menus in France. Tartines can be a quick and creative dinner solution; essentially a beguiling combination of toppings served on toast. In this version with squash (or use zucchini) cooking time is a quick 3 minutes and Deborah Madison’s method of sprinkling the squash in the hot pan with water and covering with a lid is ingenious.  The squash smell sweet and appetizing and take a grilled appearance. With  minimal ingredients from the SimplyCooking® Pantry and a maximum of 10 minutes, this delectable sandwich awaits.

2 heaping Tbsp. ricotta cheese, goat cheese or other spreadable cheese

honey

minced red onion

Italian seasoning or choice of minced fresh herb like thyme or oregano

salt, Celtic Sea Salt preferable

1 tsp. grape seed oil

1 or 2 zucchini or yellow squash

Italian seasoning

lemon zest

toasted sprouted grain bread or other bread of choice

Combine the ricotta cheese, a drizzle of honey, a bit of minced red onion and a pinch of dried Italian seasoning and Celtic Sea Salt.  Adjust these ingredients to suit your taste.

Stand the the zucchini {yellow squash is another summer squash that works well} on its end and slice in very thin slices lengthwise.  Warm a small bit of oil in a skillet and add the zucchini slices.  Splash with some drops of water from your fingertips, cover with a lid and cook over medium for 3 minutes.   Add a few pinches of dried Italian seasoning and the zest of a lemon.  Smear the ricotta spread over toast* and top with the cooked zucchini.

*Without a toaster, simply place the bread in a hot skillet for a couple minutes, turning once. Do this before cooking the squash.

Will make 4 tartines using sprouted grain bread and more with baguette pieces.
