Passing on the sweets much of the time, I do make a devilish chocolate cake when the mood strikes and wrap it in billows of a luscious chocolate frosting. This frosting goes on thick and satiny; use a wide, flat spreader to create the fat billows. The ingredients are all basic from the SimplyCooking® pantry.
simply chocolate frosting
113 grams (1 stick) butter
2 oz. unsweetened chocolate
30 grams or about 1/3 cup cocoa powder
2 tsp. vanilla extract
150 grams or scant 2 cups powdered sugar
8 oz. sour cream
Melt the butter and unsweetened chocolate in a saucepan over low heat, stirring constantly until smooth. Transfer to a large bowl. Whisk in cocoa powder and vanilla. Whisk in half the powdered sugar and half of the sour cream then the remaining powdered sugar and remaining sour cream.
