Thickly sliced, ripe tomatoes; fresh greens, crisp and slightly bitter; a few steamed vegetables; dressing any one of these is supremely delicious and simple when drizzled with a fresh vinaigrette. Shake some up in a jar, minutes before mealtime, almost as an afterthought.
honey balsamic vinaigrette
1/4 cup Balsamic vinegar
1 Tbsp. Dijon mustard
1 tsp. honey
Salt and pepper, to taste
1/2 cup olive oil, cold-pressed
Place all ingredients, except the oil, in a jar. Shake the jar vigorously. Add the oil and shake well again.
