In the next several posts I shall praise the bee and use the exquisite product it produces - honey - in an array of simple recipes. Honey Mustard Chicken is classic and versatile; moist chicken with a light sauce sweet and tangy sauce. Serve with quinoa or brown rice and some raw vegetables. Or slice the chicken and toss with the sauce into a pot of pasta. This simple everyday recipe is a 'go to' dish on days I've done too much buzzing around. Hopefully, more like the bee rather than the mosquito, my efforts will be praised.
honey mustard chicken
4 boneless, skinless chicken breast halves
1/4 cup Dijon mustard
1/4 cup honey
Place the chicken in a shallow dish. Squeeze a lemon half over the it. Combine the mustard and honey in a small bowl and pour over the chicken. Cover with foil and bake 1 hour in a 375 degree F. oven. For the chicken to brown, remove the foil and bake for an additional 30 minutes.
