This is an exciting category where new choices are quickly emerging. I have experimented with alternative and ancient grains for many years when they were hard to come by. I am delighted to see some of these old friends on the supermarket shelves. What did the ancients know? I think quite a bit. The soaking and sprouting of grains in a practice I believe in and use. And rices, how many colorful and responsible choices beyond white rice. Be creative and choose the varieties that appeal to you, your values and sense of adventure.
