Enjoying Frozen Banana Bonbons

Dark chocolate encasing an ice cream like center, these frozen banana bonbons are rather divine. A small dab of honey lends a taste of caramel.  Forget the frozen dairy novelties wrapped in plastic and card board;  this is a genre of food for an easy and elegant summer kitchen.   Clear out the freezer clutter and make space for a tray of these enticements.  What's to object to when the ingredients are simply bananas, dark chocolate and a touch of honey?  

One ounce of chocolate to one banana is the ratio; times three makes 2 dozen bonbons.  Bonbon appetit!

3 bananas

3 oz dark chocolate

honey for drizzle {optional}

Select a tray that fits your freezer shelf and line with waxed or parchment paper.  With a serrated knife, slice the bananas into  1 inch  pieces.  Start at the center of the banana and work to the edges with parallel cuts to avoid lopsided chunks.  Place, one by one, on the tray.  Keep in the freezer while melting the chocolate.  

Melt the chocolate:  Put 1 inch of water in the bottom of a pot and turn the heat on low.  Place a heat proof bowl on the top of the pan; it should not touch the water.  {The steam produced by the water does the melting.}  Break the chocolate into the bowl.  Allow it to melt, gently nudging with a spatula.  Watch the chocolate; remove the pot from the heat once the chocolate is melted and smooth.  

Coat the banana chunks with melted chocolate and return to the tray.  Dip a fork in a bit of honey and drizzle over each.  Freeze for an hour and then keep in the freezer, until they disappear or up to several days.
