Chickpea Avocado Mash
Simple foods. Some duos of fresh foods require little to nothing else - such as chickpeas and avocados. Mashed together, their alchemy conjures a creamy base for a veggie sandwich, dip for raw vegetables, a toast topper, or schmeer for crackers. Here I use chickpeas ready to go from a tetra box for a quick dinner. But chickpeas can also come in a dried form and can be soaked and cooked.
1 15 oz tetra pack of chickpeas
1 ripe avocado
juice of 1 lime or lemon
pinch salt {Celtic Sea Salt, preferable}
ground cumin, to taste {optional}
Mash together all ingredients using a fork or immersion blender. With an immersion blender it will take just a few seconds. Taste and adjust seasoning to your liking.
