Greek Salad
The simplest of salads is classic Greek Salad as is made in Greece. No lettuce; rather, chunks of tomato, cucumber and feta cheese, with salt and pepper and a drizzle of olive oil make the Greek Salad. The ingredients are the stars, pure and simple, and quite Greek.

1 tomato
1/3 cucumber
feta cheese cut from a block
salt and pepper
1 TBSP olive oil
pickled red onion, optional
Cut the tomato into bite sized pieces and place in a bowl. Peel a few strips of skin off the cucumber and cut into pieces which are about the size of the tomato pieces. Cut feta pieces similar in size. Sprinkle with salt and pepper and drizzle with olive oil. Pickled red onion can be added, if desired.
