Greek Baked Feta
Here is a simple way to dress up a block of Feta cheese. The flavor of a fresh herb infuses the cheese so delicately. The sprig will brown when baking, so remove it before serving. The flavor will present in the most delightful way. For sharing, serve as part of a meal or as an appetizer.

Block of feta cheese
Sliced red onion or pickled red onion
salt and pepper, to taste
Olive Oil
Honey
Herb of choice, like dill, thyme or oregano
Preheat the oven to 350 degrees F. Place the block of Feta cheese on a piece of parchment paper atop the same sized piece of aluminum foil. Cover generously with thin slices of red onion, then add a pinch of salt and pepper. Drizzle with olive oil and a touch of honey. Top with a sprig of fresh herb, or sprinkle of dried herb or a bit of lemon zest. Wrap the parchment lined foil tightly around the cheese, like wrapping a package and folding the ends tight. Bake for 20 minutes. Unwrap and remove the sprig of herb before serving. Serve with bread.
