Trio of 'Pick Me Up' Balls

With just the right amount of sweet bliss in a few bites, these balls are a more fun and fancy pick me up to 'energy bars' you buy.  So simply you turn them into a trio :: plain, cacao dusted and coconut rolled.   Indulge and feel good about it.

1 cup {3 oz} oats

1 cup {3 oz} almond meal

Heaping 1/4 cup { 1 oz} cacao or cocoa powder

pinch of salt { Celtic Sea Salt, preferable}

1 heaping Tbsp. cashew butter

2 Tbsp. honey

1 tsp. vanilla extract

Grind the oats to fine in a blender. {An immersion blender is perfect for this.} Place in a bowl and add the dry ingredients.  Mix well and add the wet ingredients.  Mix with a spoon and your fingers bringing the dough together in clumps.  Add a teaspoon of water one at a time, if necessary.  {This may be necessary depending upon how the almond meal is measured.}  Shape into balls and place on a tray.   Will make 12 1 oz. balls.  

Leave 4 plain. Roll 4 in additional cacao.  Dip the remaining 4 in 1 Tbsp. liquid coconut oil and roll in shredded coconut.  {Unsweetened coconut can be lightly sweetened with powdered stevia, if desired.} 

Keep chilled. Enjoy.
