Trio of 'Pick Me Up' Balls

This is a nice alternative to a packaged energy bar. Made with your own fine ingredients, know what goes into them and make them to your liking. Here, I have rolled some of mine with cocoa and coconut. You can also roll them in ground nuts, powdered sugar, melted chocolate or simply leave them plain.

95 grams (about 1 cup) oats

95 grams (about 1 cups) almond flour

30 grams (1/4 cup) cacao powder

1 tsp ashwaganda powder (optional)

pinch of salt { Celtic Sea Salt, preferable}

2 heaping Tbsp sunflower butter ( or preferred nut butter)

2 Tbsp honey, or more to taste

1 tsp vanilla extract

warm water

Grind the oats to a fine meal with an immersion blender. Place in a medium sized bowl and add the almond flour, cacao powder, ashwaganda powder and salt.  Measure them out simply by using a digital scale, zeroing out the scale after each addition. Stir, then add the sunflower butter, honey and vanilla.  Mix with a spoon and your fingers bringing the dough together in clumps.  Add warm water one tablespoon at a time to achieve a consistency such that the crumbs hold together when shaped into a ball.   Shape into twelve balls and place on a tray.  

Leave 4 plain. Roll 4 in additional cocoa powder.  Roll 4 in another ingredient like chopped nuts, powdered sugar,  or even shredded coconut like I happened to have on hand when taking this picture.

Keep chilled.
