Soup for One | A Delicious Noodle Broth
Some meals call for a just a light soup, something noodley and with an soothing flavor. This recipe is just that and makes just enough for one serving.
2 - 3 cups chicken or vegetable broth
1/2” fresh ginger
1/2 “ leek, onion or shallot
pinch of red pepper flakes
honey
soba noodles
Bring 2 cups of broth to a boil. Peel a 1/2” piece of fresh ginger and slice into coins. Add the ginger, thin slices of leeks. a pinch of red pepper flakes and drizzle of honey. Reduce the heat and simmer 10 - 20 minutes. Add additional broth if it seems to be reducing too much with the simmer. Add the soba noodles and cook for three minutes.
