Good things abound in the fridge; simple foods to turn to daily to create a lifestyle of vibrant health and happiness. A favorite, in a little glass jar, I am always pleased that I've taken three (3) minutes to make is chia seed gel. I've tried many proportions and the best is what Neka Pasquale uses for her Chia Gel in her inspiring book Urban Remedy | The 4-Day Home Cleanse Retreat. With this gelatinous substance, smoothies, smoothie bowls, yogurt and porridges get a delightful upgrade to super delicious and super nutritious. Made with simply chia seeds and water, the following proportion, while not absolute, is ideal - not too thick, not too thin, not too seedy, just right.
chia seed gel
2 cups water
3 Tbsp. chia seeds
Whisk together in 10 second intervals several times over two or three minutes. I do this in a four cup liquid measuring cup or glass jar. Cover and refrigerate overnight or for at least 30 minutes. Use within 5 days.
