Overnight Muesli | No Cooking Required

At the base of Beaver Creek Lodge's Lift Number One is a busy cafeteria where you ski in and re-energize. Among the offerings is an ever so alpine dish:  muesli.  Skiers grab a soup bowl, ladle in a healthy portion of the milky oat concoction and top with a mountain of fresh and dried fruit.   

Since reading up on digestion and nutrient absorption, I've made a habit of soaking oats for up to 24 hours before cooking with them.  This recipe for a creamy muesli accomplishes just  that;  no cooking even required.  The recipe makes one generous portion with basic ingredients from the SimplyCooking® Pantry.

2/3 cup whole, almond or coconut milk

1/2 cup oats

1 cup plain yogurt

3 Tbsp. honey

1/2 lemon, juiced

Add-ins of choice: sunflower seeds, nuts, dried fruit, diced apples, frozen fruit, chopped banana, SimplyCooking® Great Day Granola

Make 7 - 24 hours before eating.   Warm the milk and place in a bowl with the oats. Let this stand for 5 minutes then stir in the yogurt, honey and lemon juice.  Cover and refrigerate.  Serve plain; add-ins are optional. Ladle into a bowl. This can make several servings, depending on your appetite.

To Add In Frozen Berries

Sprinkle a layer of frozen berries on the bottom of a bowl.  Ladle a serving of muesli over the top. Cover the bowl with plastic wrap and refrigerate overnight.

To Add In Fresh or Dried Fruit

Just before serving, stir in any fresh or dried fruit or any other add ins from the pantry.
