Excellent Avocado Toast From a Quotidian Kitchen
For breakfast out in a big city, Le Pain Quotidien is an oasis. Even though I eat simply for breakfast, I do love the ritual of a something hot to sip, a bite to eat and stealing a pleasurable moment - ideally outside - before the day takes off. These minutes set the tone for the whole day; a hurried breakfast, a hurried day. Ingredients in the SimplyCooking® pantry create fine breakfast foods very simply, such as this avocado toast. The version served at Le Pain Quotidien boulangerie is the inspiration for this SimplyCooking® recipe. They craft their own sea salt mix and the bread is made fresh. But the simplified version of avocado toast here is equally good for breakfast or a simple dinner and perfect for quotidian kitchens and everyday life at home.
avocado toast
2 pieces sprouted grain toast, or using bread of choice
2 avocados
pinch cumin
pinch salt, Celtic sea salt preferable
1/4 tsp. coconut oil, or olive oil
lemon or lime wedge
As the bread toasts, mash one avocado in a small bowl. Add a pinch of cumin, Celtic sea salt and 1/4 tsp., or so, of coconut oil. Spread over warm toast. Slice the second avocado in thin slices and arrange over the mashed layer. Serve with a squeeze of lemon or lime. A nasturtium from the garden, piece of shaved carrot, spinach leaves, pea tendrils or a few sesame or sunflower seeds or red pepper flakes elevates the experience of this recipe to beyond the everyday.
